Please look at the display settings in the store admin.  The sort order selections listed there are the only stock choices. 
 
What you are asking for is not available, and would need to involve custom programming.   PC does not store in the products table the number of units sold, thus you would first have to capture that information, then alter the search script to sort on that value.  It's not that huge an effort but you are definately looking at something that is measured in hours to complete the task.

How do you change the order of products displayed under the categories?    I would like to display the items that are purchased the most at the top of the page.
