How about setting up the deposit as a Gift Certificate, which can be purchased and then redeemed against the full cost?
Alternatively, if ONLY customers who have paid the deposit can purchase the final full golf tournament, you could make the deposit a normal, but non-shipping product and make the balance payment a hidden product (http://wiki.earlyimpact.com/how_to/links_to_hidden_products)
