Hi It's called the Apparel Add-on :-)
With that each product+Option can be a separate SKU with separate stock levels and prices. Other than that you could have three separate regular products, although that's "messier" in the store, especially if you have many products that come in a range of colors (or sizes or both etc).

Hi All,
 
How is the best way to track inventory levels when a product has options?  For example, I have a SKU for a widget that is available in 3 colors.  I can set the inventory level at the SKU level (all colors) but is there any way to track inventory by color?  I'd like to use the low inventory notification,  especially for the more popular colors.
 
I'm curious as to how everyone is handleing this, since it seems like it would be a common problem.
