I would need to better understand your overall plan, but the core of your change is probably found within an understanding of the string that the shipping choices page uses for displaying shipping options and prices.

We would like a slight variation of their custom shipping options.

We want to be able to choose a real shipping option (such as UPS ground, though may not be possible with UPS because of their rules) - get the rates from that real option just like UPS Ground is set up right now, but have it display in Product Cart with our own custom name (such as "Cheapest").

This
* allows us to get a realtime shipping quote for the customer, so there will be no delays in getting their credit card authorized for the right amount.
