There are two ways to handle this:
1. If you don't want stock levels to be checked anywhere on your store, go to your Control Panel, Store Management Tools menu | General Settings | Store Settings and scroll all the way to the bottom. There are three settings to control how your stock works. To ignore stock levels, set the "Show Out of Stock message" to No and "Allow customers to purchase out of stock items" to Yes.

2. If you want to track stock for some items, then you need to set the Disregard Stock on an item by item basis for those items where you don't want to track stock. It sounds like you did this already through the global changes.

I find that I could use the Global Product Changes in the control panel. That took care of it.

I am just in the process of listing my products into the database and as I check my pages they all say "Currently Out of Stock". I have checked the "Disregard Stock Box" is this something that will go away once I connect to merchant account or am I missing something?
