I would definitely download the High Res eps images and then use a photo editing software to resize them. Such as Photoshop and you could select File>Save for Web and then just tell it the size you'll need and want. :) It then makes your files web ready, aka .jpg or .gif files. :)
If you have several hundreds of images (which most of us do) you could also "batch process," "automate" your "save for web" settings and apply them to several pictures at a time. But I definitely can't go into detail on how to do that because that would take a while but here are a couple of links which show you how to do this if you don't know know how.
CBTCafe.com
NetMag.co.uk
Hope that helps!

P.S. You'll also want to save the same pictures in a Thumbnail size (100x100 pixels) and name it imagename_thumb.jpg or gif.
I have the option to download .eps high-res shots of all the products but cannot get them to load into product cart. Is there a way to upload .eps files into product cart?
